Village Vancouver

Vancouver's Leader in Transition toward Strong, Resilient, Complete Communities

I have healthy hens laying big brown eggs everyday, and I'm super happy with them... my only complaint is, when I hard boil the eggs, the shells are nearly impossible to get off without losing half the egg! I'm sure I boil them just the same way as with store bought eggs. Has anyone else noticed this or have an idea why it could be?

Yes!  Just made a potato salad today with the same problems.  I've taken to cutting the boiled eggs in half, shell and all, and scooping out with a spoon.

Apparently it's because the eggs are so fresh - store bought eggs are much older and thus peel easier, or so I've heard.

Interesting! That's good that it's because of the freshness and not a problem though. Good suggestion about scooping the egg, too. Thanks!
Hmm this may be too obvious a comment - but do you put the eggs in COLD water after boiling?
Yeah fresh eggs are a bitch to peel. I keep a carton for boiling in the fridge. They are much easier if they are cold, and a couple weeks old.
No doubt there's a government conspiracy at work here making our fresh eggs hard to peel, but aging them and running cold water does seem to help.   {{:-{)>
