Join Foodwisdom’s Francesca Gesualdi on a tour of Italy's traditional holiday treat - panettone. The workshop will feature the techniques behind making an authentic loaf of Panettone, a traditional Italian sweet loaf. Francesca will demonstrate the time-honored skill of making this centuries old holiday classic using a fermented starter and a poolish. We will also cover a simpler version made using regular yeast. While there are as many aromatic versions as there are legends about the panettone’s origins, we will stick to our favorite flavor profile using plump raisins and organic citrus (meyer lemons and oranges) and vanilla bean.
